We have had some strange weather these past few days & it has caused me quite a bit of discomfort. The pain was intense & it is something that I am not yet used too. The barometric changes affect my head & cause considerable pain...........apparently this will not change either.......but

today is a much better day & almost pain free so I decided I needed to "DO" something so with help from my wonderful hubs we made 4 Zucchini loaves YUM YUM. the Zucchini are from my garden too my first time both growing (successfully) & baking this & I am quite pleased. Cranberries & Walnuts inside. I hope they freeze well

OOPs, I have just gained a couple of cyber-pounds from your beautiful baking! They look irresistible. Hope you can find a way to relieve any future head-aches fairly quickly. I find pre-thunderstorm headaches are not much fun, too.

I have been told that in my situation this will not change sigh... But I am here so all is good. I hope that you can find a way around or avoid all together yours

Oh your bread makes me envious. I had wanted to plant some zukes this year but the time just came and went. I need to see what kind can be planted for a winter crop. I get severe headaches like you do ..use to be I could always tell when it is going to rain before the weatherperson would tell us. .

They will freeze perfectly. I wish my zucchini plant was doing better. It seems I over water and it was planted late in the season. 4 loaves is impressive. Hope you feel better I can empathize with the aches and pains.

It's an strange thing I have been planting them for about 3 years or so & this is the first year that they grow & so nicely too, maybe they have to get a good start before they can grow I don't really know? They do have a fall variety so maybe that's what yours are?

They freeze great! This must be the year for zucchini! Try a loaf with fresh blueberries...yummy! These look great! Enjoy!

I take it one day @ a time Leaha, thank you. I froze three of them & kept one for us. I hope to make more they are really yummy & I can see warming them up on a cold fall day & enjoying with a hot steaming cuppa....................come on over

I cut my loaf shaped cakes into eating slices, then wrap in cling film and freeze in the pan they were cooked in so that they keep their shape. Of course all the slices do not fit in because of the folds of cling wrap, so you get to sample your cooking. YUM!
Zucchini is used a lot in chocolate cakes.

Thank you for the links. About "migraine", when I have one ( usually very painful and debilitating) , I have a good pill and I lie down until it passes, about 4 to 6 hours

So sorry to read that you are experiencing some pain with the changes in the weather. On the other hand these look super. I love Zucchini and have never thought of having it in a cake. Cranberries and walnuts will make a wonderful flavour as well. I'd do the same as others have suggested, wrap in cling wrap and then foil. They will keep for months. I've still got Christmas cake in the fridge from last year wrapped in a muslin cloth and foil and it's still yummy! Love Chris

Yummy is so right and with fresh zucchini too. Now I want to bake pumpkin bread and cookies. I'm so sorry about your head hurting with barometric pressure changes. I suffer from that too, but it is my spine and ears that hurt.

Yes, wrap them in foil, too. If not you will have icing (not the good kind). I do meals for our church and wrap cakes in film and then foil and they keep really well until ready to be used.

Yum is right! Looks so good. I make cranberry loaves quite often, but never used zucchini--will have to try that. Oh my yes, mine freeze just fine. If you are in doubt tho, I'd be happy to stop by and take it off your hands. Hug ya!
