I think I am going to cry. I made these 5 Christmas cakes today & two of them look burnt on the top. The bottoms are just perfect? Does anyone know what I can do if anything. I still have to soak the cheese cloths in brandy so maybe if I pick off some of the burnt it might be ok? Or do you think they are ruined?

Don't worry the will taste perfect. I your giving them to people slice off the top and place it on a board upside down no one will be the wiser.

Everything tastes good soaked in Brandy...I think they will be fine...for the two in question, slice off the top, soak in Brandy, then ice them...how can you go wrong?

Soak them heavy in brandy and no one will notice. LOL!!! We made 3 cakes this year 10x10x4. Cost about $60.00 a cake to make, but are oh so good. We gave 2 to friends and kept one for our family. The trimmimg and icing might do the trick if it is not burnt taste all the way through. Hugs Lynn

thanks so much Lyn & a great recipe of yours too. I have soaked the cheesecloth with brandy for all 5 & hubs said he will keep the darkest one we have cut the top crust off & it is really good very moist too. Thanks to you for the recipe & for Chris making & posting hers this year too. ~hugs~

We made that cake 20 years ago for our daughter's wedding. We have done it every year since. It is a combo of 2 recipes that turned out to be just great. Everyone loves it. Enjoy.

I'd carefully slice off the dark top and maybe serve it upside down. Or put a thin layer of icing on top.

I will get hubs to try them but I think icing them like Martine has mentioned in the post above is the way to go & trimming off the top part too
