I would like to make my own traditional Christmas cake from scratch this year. I am getting in early as I know some cakes take months to be fully completed for the best flavour.

Does anyone have any foolproof easy recipes? I am thinking of making three. One for Christmas day, one to send to a relative that won't be here on the day and one to enjoy after festivities are over. Different recipes ok so I can try them all out. If you have a fave recipe that you love and have made before feel free to share. Warning I am not much of a baker so it needs to be easy but delicious!

Here is my Baileys Christmas Icecream cake recipe! Ideal for hot Aussie Christmas Day.
2ltr tub of plain icecream
Bailieys Irish Cream
Mixed Dried Fruit (anything you like, I usually use one that has currants, peel and cherries)


Soak 2-3 cups of mixed dried fruit in 1-2 cups of Baileys Irish Cream overnight. I usually place in the fridge. Quantities are really personal preference.

Next day remove the tub of icecream to soften slightly while you line a freezer safe bowl with cling wrap or similar and let the extra fall over the sides to be folded back over later.

Stir the icecream into the fruit mixture and pour into the freezer safe bowl. Bring the sides of the cling wrap over the top and freeze at least a few hours until required. I try and make this a few days ahead.

To serve turn out onto a platter, remove cling film and cut into slices. YUUUMMM!!

To make this kid safe you can soak the fruit in a cold chocolate milk drink instead of the baileys.
