Now this is the earliest I have started preserving for gifts for next Christmas.

I have spent the day prepping and canning around 3 kg cherries for my brandy cherries. We still have some cherished jars from 2015 that taste divine. They are from a small batch so were only reserved for special occasions. I didnt make any last year as they were way too expensive to buy. This year I managed to find some for a good buy.
I still have another kilo of cherries in the fridge but I think we will just enjoy them fresh while we can.

I managed to can 18 jars of brandy cherries. I also managed to can several jars of the alcohol free syrup fir icecreams and smoothies. Yumm. Cant wait to try these out but must wait at least a month

You must live in the southern hemisphere...no cherries here until June/July. I can about 2 dozen quarts for eating, freeze a bunch for smoothies and baked desserts and the rest go into juice. Yum! Enjoy the work of your hands...they look delicious! Avis

Yes I am in Australia. We usually get cherries just in time for Christmas, they are much dearer than chocolate per kilo! Love that I got these on sale

We get cherries in June -July also , if the US cherry season has been good.
Cherries are our special treat, husband is waiting for the white ones to appear.

They look so good. Like Toogie, I have never canned cherries. We just freeze them. But I may have to try this. Any tips?

I have frozen a bunch too but I am limited on freezer space so if am able to can something I do. I leave the pits and stems on to save time and the pits give extra flavour. I am happy to send you the recipe I use if you are interested, just send me a pm

They look so pretty but this is something I've never canned. What do you use the brandy ones for/with?

We use the brandy cherries for lots of things but mostly to decorate pavlovas, cheesecakes or trifles. They are also tasty coated in chocolate and really good in a black forest cake or in a cocktail if you drink them. The brandy syrup the cherries are in is delicious drizzled on pavlova and ice cream. My DH actually just drinks it if he thinks no-one is looking. I just turn a blind eye then 😉
