At last a correct answer!

These meringues are made from Aqua Farba, cream of tartar and sugar.
Aqua Farba literally means "bean water" and means the liquid beans have been cooked in. I can't even estimate the amount of this I've thrown away over the years! It contains proteins leeched out of the beans during cooking. This are similar to albumen in egg white.

To make these, I drained a can of chickpeas (which went into spicy chickpea and potato pasties) and whisked the liquid up with the cream of tartar and sugar, just as if I'd been using egg whites.

I haven't posted anything for a while but here is a quiz for you.......

No points for me as I saw it done on TV (was it Nigella who showed it?). It sounded to good to be true. I did not try it out and still wastes the fluid.

I saw it somewhere (not TV) ages ago and tried it with the water after I'd cooked some from scratch. That was only. partially successful. I noticed it again in a Vegan magazine and thought it worth trying again. I use quite a lot of chickpeas so I'll be trying some more recipes!

Trev and I are sitting at our breakfast table in our Royal Scot hotel, Victoria on Vancouver island discussing this topic. He suggested cauliflower, white mushroom, turnip and parsnip. I thought maybe chickpeas or some other bean. Love Chris

Yummy...I would say egg whites, pinch of salt, cream of tartar, vanilla and/or other flavoring of choice, and sugar.

I make these at Christmas, with those ingredients, Kim and into half of them, I throw in mini chocolate chips. Yum!!!
