How big should a quiet book be?

I think that's really up to you.
As you did not make a comment I don't know if you read the answers to your earlier questions. If you did and decided on using rings to connect the pages you could easily add some extra pages if you think the book would not be thick enough to keep a child quiet for long (or in the opposite case take some out).
