I dry them in the oven. The goo is the best part. It tastes like candy. They are not so pretty as the slices from the health food store, however when my daughter comes to visit, they are gone!!! Did you know if you go down the middle they separate into 3 long pieces. They need to be quite ripe. Definitely do it on parchment paper, not waxed.
Besides banana bread and cookies, I like to cut them in half, insert a popsicle stick in the cut end and pop them in the freezer. Once they are frozen I dip them into melted dark chocolate and back in the freezer they go until we are ready for a frozen treat. After the chocolate is set, I put them in a plastic bag before storing them in the freezer.
I used to tuck small amount of mashed banana into otherwise flavored muffins to reduce white sugar and add fiber, but that's not going to help you get rid of a big leftover banana problem. Happy cooking.
I make a quick banana cake using a packet vanilla/chocolate or any other flavour cake mix and add the eggs, butter (melted), half quantity of the milk/water and mash 2 bananas and mix all together bake as patty cakes or in a loaf pan or cake tin as directed. I prefer to bake in a loaf tin as my family prefer a thick slice spread with butter.
I mash 2 bananas, then mix in 1-2 cups rolled oats(depends on the size of the bananas and their ripeness) add a tablespoon or so of maple syrup or honey. Drop by the spoonful on a baking tray, flatten and bake for 5-10mins at 180°C. Makes for some soft biscuits that are healthy. They freeze well too.
I also like to add cinnamon and other spices for extra flavour. Also sometimes add some chopped dried fruit or sultanas and chocolate bits for an extra treat.
