Hi Cuties! Yesterday a friend called. She offered us almost a 5 gallon bucket full of tomatoes. I said sure, we’ll come pick them up. This is what they had for us. (not all tomatoes are on the table) Hubby and I cut up 37 bell pepper that yielded 6 quart bags.

Now I have to can tomatoes but I may just make Salsa. I’ve never tried to make any before so I hope it does well. We couldn’t find ANY lids and rings for our jars so I had to buy a box with 12 jars with rings and lids.🙄it makes for expensive canning but I hate for any food to ruin. I have remembered to set me a few tomatoes on the side for my salad or sandwich this time. We have never eaten this kind of eggplant (green) but this is their color/kind. They don’t get purple.
The peppers look like jalapeño but Marty says they are not hot. Personally I don’t understand the purpose then.-lol-

I came out with 5 pints of Salsa and used about half the tomatoes. Bell peppers are finished. Making a pasta salad tomorrow and maybe try one of the eggplants.❤️

Toogie, you can freeze whole Tomatoes just as they are picked with out having to do anything to them. Of course once they are thawed you can only cook with them not use them in a sandwich or a salad.

A friend of mine does that and uses in her soups and chili. I really don’t have a lot of freezer space and I have 2 deep freezers!

Yummmy!!!! I can't handle the weight for water baths so I dehydrate my fruits and veggies. And I wish but I can't fit any more into my freezers. I agree, don't let food go to waste. I wonder how well salsa would freeze?

The package says you can freeze but the only drawback says it only last a week in fridge once thawed. I don’t know. I have 5 pints in the canner now, used about 20 tomatoes

Gosh dear you never stop. I enjoy seeing your sewing and the food side too. Looks like you have been busy. Freezing is more popular in the UK than canning. All looks very yummy

The Salsa season said you can freeze it but says only keep a week in fridge, once thawed. I just told my hubby about freezing or canning in jars. It’s a lot of expense & work if you loose because jars didn’t seal or electricity goes out for any length of time during hurricanes. No reason some people quit canning but I still rather work and take a chance than see vegetables go to waste.

Ya'll are making me hungry. Toogie, put bits of everything in a pot with chicken broth and broken up ramen noodles (not the flavor packet). Add favorite crackers on the side for my favorite Summer Garden soup. Almost any veggie works except any with a real strong flavor, like asparagus, cauliflower or jalapenos - that flavor takes control of the soup!

What a wonderful harvest. Trick is to purchase lids etc in the off season. I had mine delivered by Amazon. Funny thing Covid brought a lot of people back to basics like baking bread, freezing and canning. All of a sudden items for that kind of activity became scares.
I made 9 8oz jars of blackberry jam yesterday and was fortunate to have all ingredients in house when my son unexpectedly dropped of a flat of berries.
