Yes, Dolly, we need smaller recipes. I have one dessert that I often have on hand - pound cake. Of course, I enjoy a warm slice as soon as it can be sliced, but when the cake is cooled, I slice the entire cake and wrap the cut edges of the slice with a "V" of waxed paper. Then I stack the slices, alternating, and overwrap with Saran Wrap and freeze them. When my sons come by, they can warm a slice in the microwave, or if fortunate, they might be offered 1/4 or 1/2 of the cake to take home for their freezer. Second idea, not dessert. At Christmas time I love to have dressing with turkey, but I bake lots of it in muffin tins. I pop the little muffins into a large plastic bread bag (or two layers) and freeze. Nice to have 1 or 2 small portions with chicken, pork, turkey, etc. at other times of year without all the preparation.
I'm chuckling. I do something similar with pound cake and enjoy it for a treat with my handsome hubby. I love your idea of making dressing in muffin tins. A great way to have it ready when wanted and it's proportioned too.
