I like to do the watergate salad, which I will do this year, seasoned green beans instead of green bean casserole. I'm not very well prepared for Christmas, my projects are interfering with my menu. I do like the broccoli salad with onions, dried cranberries kind of like they serve at varous places like the walmart deli used to. not sure they still do that, I've also put in small raw carrot cuts or shredded, cheese, or raisins. etc. It has a mayo base and a little sugar but not too sweet. Definitely hot rolls, I just buy the frozen ones. For Mom's dinners I always brought 5 cup salad that used sourcream and mandarins, etc. I sometimes just do lasagna or easier dish if no company is coming.
I did a fresh broccoli salad last year and used green onions, raisins and nuts with the Mayo and little sugar. I like the crunchiness it has. I’ve never heard of the 5 cup salad. I am curious bc we all love salads. Thanks

Something my family loves is that Pimento Cheese spread on crackers.
It's just a combination of cheddar cheese, mayo,and pimentos in any amount that you choose according to what your family likes. I always add just a touch of chile powder. It's a bit addicting if you are a savory lover. I think it might be good too with chopped olives..

Daughter-in-law Tammy brings a corn casserole and grand daughter in law Taylor brings baked sweet potato dish with pecan topping. Emily did some kind of cheesy Irish potato casserole last year was really good. I tell Ashley not to worry about bringing bc they have to get Avery tended to and ready but she usually brings something anyway, even if just green beans. We have Cole Slaw bc they don’t tire of that, sometimes a potato salad if we don’t have the cheesy potatoes. Deserts are always Mississippi Mud , pecan pies, coconut pie, bc hubby likes those sometimes a Pink Cloud besides candy like Old Fashion Fudge, Pecan Pralines and Divinity. I like veggies, not a meat eater, because I have spasms of the esophagus when I try to eat meat. I take care of the meats, except oldest daughter will usually cook my ham for me. The girls usually do the veggie sides and I do all the pies and candies. I just would like something different for a change. I have tried to make a cornbread dressing like my mother-in-law made but I can’t get the right texture. It has the taste but it’s either too dry or it comes out gummy.😩 She didn’t use a measurement of anything so it’s all guesswork.
Salad - Aunt Mary's Salad - so simple and quick. Iceberg lettuce torn, 1 orange, peeled, seeded, and chunked, 1 onion diced (mild if you can find), 1 apple, cut into smallish pieces. Dress with Orange (Catalina) dressing.
Aunt Mary is not my aunt, but recipe is out of my Aunt Beulah's church cookbook. so you know it's good. The squash casserole is out of the Junior League cookbook.
Yes I find church cook books have the best recipes. They are usually dishes the member has perfected. My son-in-law Richard’s mom is name Beulah and she collects cookbooks. Marsha says she’s always trying something different. Someone gave me a cookbook from the church we have our quilt days at. I need to read some of those. Summer Squash Casserole - I don't have the recipe to hand, but I know the ingredients by heart - yellow summer squash sliced and gently cooked, enough to almost fill your casserole, onion cut small or grated if you're brave, grated carrot (the key ingredient that adds a lot of flavor and color. Spray your casserole with spray cooking oil and add veggies. Mix separately Cream of Whatever Soup, a bit of water, and small container of sour cream. Stir together and then mix into the veggies. Top with dry bread crumbs or preferably up to half a bag of Pepperidge Farm Stuffing Mix. Bake at 350 degrees for 30-45 minutes, till bubbly. Serve hot, hot. This is really nice with turkey or chicken but also with beef or porkl. I believe my crew would eat it with their fingers if I didn't have silver. Except John, who gags on squash. Still tell him he came from another planet some times. Merry Christmas to all.
I love yellow squash or white too for that matter. My mother-in-law usually cooked it down with sugar like a desert. I only recently smothered it down with white onion and seasoned with salt and pepper. I had never eaten it this simple way until one of our sew/quilt days. ( My husband says we go more to eat-lol) I am assuming by cream of whatever could be Cream of Mushroom, cream of chicken, etc my choice.
Yes. I think the original recipe called for Cream of Chicken, but it's just to get the idea of cream sauce in there, conveniently.
Our favorite salad! Fresh plum tomatoes, sliced, English cucumbers sliced, raw broccoli in small pieces, avocado in small pieces, optional addition is a mild white cheese in cubes. Served with choice of ranch or Italian dressing. Also like Asian sesame dressing. Fresh, easy, and lots of winter vitamins.
I also use this base for a Mexican salad with frozen vegetable Mexican mix (black beans, corn, peppers and onions) then add garbanzo beans and some water chestnuts for the crunch. Dressing again an Italian or french dressing.
