Hello, Well I live in Australia and when its hot here, we mainly eat salads, alot of tomato, cucumber, lettuce, beetroot, corn etc with cold meats, chicken, fish. But, you have lots of lovely suggestions, have fun deciding

easiest and quickest bbq meatballs.... homemade bbq sauce-
1 bottle (24 oz) ketchup, 1/2 to 1 cup (depending on your tasted) dark molasses, 1/4 to 1/2 cup (depending on your taste)mustard. mix together and cook over precooked meatballs. works great in crockpot or if needed faster on stove top....hit of all the parties I go to Meatball sandwiches or meatballs and corn on the cob......

We like to mix up tuna fish, then you cook some macaroni (plain or fancy) - rinse and drain and stir it into the tuna - maybe have to add a little extra mayo ect - your choice! Regrigerate for a while then serve with tomato slices or stuff a tomatoe with it!

Our favorite hot day dessert: 1 small box peach jello - powder only!, 1 small container Cool Whip, 1 can peaches, drained and cut up, 1 small container Cottage cheese. Stir all together and refrigerate for an hour or so! Delicious! Can use whatever flavor jello and fruit you want - just use powder - don't mix it like jello direction.

I made chicken fajita pizza. It isn't hot here when it is I love salads, lettuce or macaroni types, and a sandwich. This summer I made a lot of wraps. I think my alltime favorite summer meal is BLT's and corn on the cob.

This is a great one when you don't have a lot of time. 2 lbs. Kielbasa or smoked sausage, 2 lg. onions, 3 lg. bell peppers, 1 can pineapple chunks in pineapple juice, 2 tbsp. oil.
Put the oil in the skillet. Cut onions and peppers into 3/4 inch strips. Saute until onions start to become clear. Cut Kielbasa in 1 inch chunks, add to the onions and peppers. Add pineapple, including juice. Cook until most of juice is absorbed. This is also great in the Dutch oven.
Enjoy.

My CROCK POT is my friend. Dump chicken (any pieces..with or without bones) into crock pot...open jar salsa...(your favorite) pour on top of chicken...put cover on crockpot..leave alone ALL day while you do your favorite thing :) Serve over rice/noodles (your choice again)...debone leftovers (if there is any) use in taco's with your favorite toppings... YOU CAN DO THIS ON TOP OF STOVE TOOOOO (less time)

I do this recipe too. Add a can of corn, and black bean with the above, and serve it over nacho's with cheese, lettuce, tomatoes, sour cream. . .however you like it best. Leftovers freeze well too.

Hey it is 86 over here and as much as I don't really like the hot I am enjoying it, just go outside fire the grill, make a whole gallon of lemonade and anjoy life. Sorewhere is the world there is someone who wishes was having a 80 degrees day *2U

I made stuffed grape leaves last night...was very good. :-) Take 1# ground meat (I used turkey) season with kosher salt and some fresh garlic, cook on the stove with some cut up onion. In the mean time make some brown rice and add it to the mixture when you're done (1/2 meat and 1/2 rice)... then open a can of tomato sauce or spaghetti sauce and add 1/2 to the mixture. It makes it easy to mold... then open your jar of grape leaves (soak in water for 10 minutes to neutralize) and start filling them. Once done, put them in the oven with the remaining sauce and cook for an hour.

It's warm where I'm at, that's why I have a protable oven outside on the patio.

Orange Rosemary lemon olive chicken. Take about 2 hours to cook. It is on Martha's web site. My family loves it.
