Maria, this is why Cuba & the Bahamas & Jamaica, etc. are such *happy* islands!! Y'all eat like this! (I looked at some of the other recipes too, delicious! but not squid for me!) How I would love to try this, but I'm on a gluten-free diet. Talk about a boring life! Perhaps I will just have the rum and pretend the cake is around it, hee hee hee. Then you gals won't see me for a couple of days! If I disappear, you'll know I ate Maria's cake raw!! Love y'all, Marji

You are correct ladies, the flavor of the rum remains and it is delicious, the alcohol evaporates.

I'll vouch for this I've been making it 4 yrs. whenever they had a cake sale to raise money for activities where I was employed I took orders from people wanting it. try it girls You'll like it. the alcohol dissipates as cake bakes. Thanks 4 sharing it Maria. *4U

I've made this and it's good. Has the texture of a pound cake and sliced well. It may have been in the Bacardi Rum ads. My family used to make fruit cakes, but they are to expensive to bake now. No comparison to that bought Claxton Fruit cake!!

Heat removes the alcohol, so when used in a baked recipe, it is safe for all. (or so I have been told.)
