Sent this recipe which I think that I will just have to try. She said that it is so good with cut fruit, and especially Asian pears. Gingersnaps sound good to me - thought you might like to give it a try.
Pumpkin Pie Dip
15 oz can Libby's canned pumpkin
1 small carton sugar free instant vanilla pudding (I used the Fat Free also)
8 oz. container sugar free Coolwhip
Dash of cinnamon
Mix pumpkin with pudding & cinnamon. Add Coolwhip & mix. Serve. This keeps well in the refrigerator also.
