Pumpkin cheesecake

2 blocks cream cheese (use less fat ones for lighter)
3/4 sugar
3 eggs
1 can pumpkin
pinch of each-ginger, cloves, nutmeg
dash or 2 of cinnamon
handful of pecans(you'll need butter and brownsugar to caramlize these)
1 small container of caramel apple dip(light if you need less fat)

Mix 1st 4 ingredients together plus spices. dump in premade graham cracker crust. top with pecans and drizzle with caramel.
Bake at 450 for 10 mins and then lower temp without taking out cake to 250 and bake for 1 hour or until done.

White chocolate lemon-raspberry cheesecake.
3 blocks cream cheese
3 eggs 3/4 c sugar
4 squares white chocolate, melted
zest and juice of one lemon
raspberry preserves or fresh raspberries with sugar(or splenda)

Make as above except do not add the raspberries until you get ready to put batter in pan. Put a little at bototm, add raspberries then add the rest. Bake as above.

Thanks for the recipe. I have a Red Cross Christmas dinner on Dec. 7 and this would be perfect. I also just finished making all my pumpkin puree. Can you tell me what size can of pumpkin? Do you know how many cups that might be? Thanks again.

They sound yummy. So I can translate the recipe, what weight is a block of cream cheese, and a 'square' of chocolate in the US. In NZ we get cream cheese in varying size containers, and chocolate in anything between 50gram and 350gram blocks.

Cream cheese is 8 ounces. Chocolate comes in a bar that is serrated into squares that are about 1" x 1 " and 1/4" thick.

Ashta, those sound wonderful! Question though. Do you cook them in a storebought graham cracker crust, or the usual cheesecake crust that you do yourself in a springform pan?

You can do either actually. I am lazy most days and buy the store bought one, but if you are adventurous the homemade crusts work too... I use vanilla wafers and cinnamon grahams together for the pumpkin.
