Who was looking for the pumpkin pie recipe? My 11 year old (who loves pie) wants to know if you made it and liked it.

Just thought I'd let you know - I finally got another pumpkin to make a pie. It was really yummy and three out of my four girls liked it - so I guess that is a pretty good success rate. The one that didn't doesn't like anything (except junk food) at the moment! Even hubby liked it. :)

Maureen, how sweet of your 11 year old to want to know. Hehhe! I have an 11 year old grand - she loves to do embroidery projects with Grammy. *4U

The soup is pretty easy. A big pumpkin, and whatever veges you have around (more like any vege you want to sneak into the children and husband) I usually put in cauliflower, brocolli, a couple of leeks, carrots, zucchini, parsnip, spring onion, capsicum, sweet potato etc..)
Peel/scrub the veges and throw it all into a big pot with not too much water, and boil till soft. I use a stick blender to puree it all up, (or use a food processor). At this point take out and freeze in litre containers what I am not going to use that night.
The last litre or so I add about another litre of water and a packet of chicken noodle soup powder. If you dont have that some chicken stock or vege stock powder would work, it just gives it a bit more flavour. Salt and pepper to taste.
Then to make the children happy I crush up a packet of 2minute noodles (instant noodles) and put them in and the girls love it. Serve with bread rolls... yum

Secret is the pumpkin hides all the other good for you vege in there and they don't even know they are in it. I used to use pasta alphabets which my daughters loved but I haven't been able to get them. The noodles/alphabets are really just to make the children happy, I didn't used to add that until I was making it with children in the house

Then for a quick easy tea, take out a frozen litre block of puree, put in a pot with a litre of water, heat up, add stock and noodles, and dinner done!

That would have been me. I haven't yet, hopefully this weekend. I need to get another pumpkin. It is early winter here (NZ) and they are in season and very sweet. I have just used up my two pumpkins in a bulk batch of pumpkin/vege soup, (which I freeze batches of for later easy dinners!)
I will let you know how it goes :) I am hoping my 8 and 10yr olds will like it.
My girls follow the posts here too!

You should share your recipe for pumpkin/vege soup. I have never had that! I'm sure my kids would not eat it. lol!
