it was hard as a rock! I'm desperate..doing a cake that called for soft candied ginger. I can't even chop this very well.

I know for brown sugar you put it in a sealed plastic bag and microwave for a few secs and this softens it up, not sure about the candied ginger tho. Did you try googling it?

Thanks, I did google it but after 10 pages gave up..found lots of neat recipes though. I tried the microwave also but must have been doing something wrong..lets just say it didn't work haha!
