I trim both sides. I like a clean finish on my signature work.
I usually trim all the threads I can see, and then I look again, and of course I missed some. My dealer advised NOT to trim the back tiny jumps between letters in most fonts (ok to trim front) because it allows them to sort of unravel with wear. I have stopped trimming those, but they are usually tiny and most non-ME folks would never notice them. Linda
I trim up the longer ones and where it crosses where I need to take the stabilizer off but not usually the small ones - I always cover the stitching with a soft interfacing so it does not scratch and so it keeps strings from being caught. I do trim everything for FSL and some ITH projects where the back is seen.
Well I usually don't but then they are almost always quilt blocks, so they are covered by batting and a backing. For dishtowels, etc I always clip every thread I can find, it looks nicer that way.

If I'm going to cover the back with something soft so the design don't scratch I don't clip the threads on the back. If I'm paying attention I will stop and clip the top threads as they jump or when changing color.
Yes I do it, it gives a work more tidy, For the cloth, the children do not get their fingers through the threads
