checking around, online and even in the restaurants for the recipe and nuttin'. I don't like green beans but just love these and on top of that our local buffet closed so I'm really in a pickle (kidding) Anyway I know it's not sewing but was hoping somebody could point me in the right direction. Thanks and hope everybody had a good turkey day, I know I did.

There called Snow Peas and the Chinese resturaunt here serves them two ways. They bring a bowl of cold ones out with sea salt sprinkled on them or you can order steamed snow peas. I love the steamed ones with a little bit of garlic and sea salt there isn't any kind of oil on them. But they are yummy!!!Dawn

Flat green bean are snow peas Expensive. Most Chinese places have the green beans. Cook them in a pot of boiling water for about 2-3 minutes. Then place thenm in a bowl of ICE water. Drain pat dry.
Quickly Saute beans in a pan with Extra Virgin Olive Oil and some finely chopped onion. Serve HOT.( a steamer basket or a small colander for a large pot also works great, and allows you to lift it all out quicker. Drain and shake off the water, place beans in your hot skillet) For a spicier taste add a few red peppers.I love them this way.But have no one to cook for.

I cook whole baby green beans (commonly called string or stringless beans) the way Lilylady describes them.

I place them in a microwave safe glass dish and SPRAY with water, then only partly cook them so they are still crisp but hot, then I spread a reasonable amount of real butter over the top of them and add crushed garlic. Sort of toss them in this so the butter melts.

You could melt the butter separately and add the garlic to that before putting it on the beans but you have to be careful not to make the butter so hot that it separates.

Don't add any salt or pepper, leave that to each person to season their own serving to suit themselves.

Of course you can also cook them in a saucepan, in which case you would bring the water to the boil, place the beans inside a chip basket or similar so you can dunk the whole lot into the hot water in one go and lift it all out at the same time, Drain and shake off the water, place beans in a preheated glass dish, then spread with butter and garlic and put a lid on to keep warm until serving. I always cook my beans last so they are still nice and hot as they tend to keep cooking and you can't very well dunk them in cold water to stop the cooking process because you need them hot to melt the butter.

I do hope you can follow these instructions. I love crunchy cooked garlic butter beans, served with mashed potato. Darn, now I'm feeling hungry!!!! LOL!!!

PS, you can use pure virgin olive oil instead of butter, but I don't like the taste of oil in my mouth.

This sounds pretty close I'll give it a try, and I agree with you butter all the way......;-)

Are they Snow Peas perhaps? They are flat, bright green and crunchy, and absolutely yummy. Also very good, raw, in salads.

I am sorry I don't know the beans you are referring to, I do lots of Indian cooking, but I eat Chinese and they are just green beens in there as far as I can tell. Perhaps a Chinese Cute will come along and answer your question.
Hugs. Alice.
