I work in an embroidery shop. This is how I would hoop your sweater. I would put a sticky back stabilizer on the sweater back itself before hooping it and then also a cutaway behind it. Unscrew/loosen your hoop up place the bottom hoop where you want your design and then use a soluble stabilizer on the top. (This will keep your stitches from sinking into the fabric.) Tighten hoop and place on machine. Cut away your stabilizer only on the back and when you moisten the top stabilizer, the sticky back stabilizer should come away from the fabric back very easily.
I would feel confident doing this with a fill and also applique. Either one will work.
You are a very brave lady but if Vicki (basketcase) says it is doable and you follow her advice I am sure you will be OK. Please post in projects when finished, so we can all learn.

Yes, it is doable...I used sticky stablizer to stick the sweater to the hoop, then stuck 2 pieces of med. cutaway on bottom of sticky with spray, I used super wash away sulky on top and ran machine slower than normal, I also cut the density of the stitches a bit and adjusted the pull compensation on the stitches.........

Good morning, I would use a rinse away stabilizer on top and a good quality cut away on bottom. Also be more inclined to do applique as a filled design might be too dense and distort the sweater. Just my ideas.

that will not be easy, whatever happens you will need wash away on the top. big design for a pullover. Hope someone else will give tip what stabilizer to use underneath. good luck. edith
