There is a recipe for Thai Coleslaw made at Claim Jumper restaurant that I love and found a copycat recipe online. Its so good.
Thai Coleslaw - Claim Jumper
Ingredients

1/2 head napa cabbage, thinly sliced
1/2 zucchini, julienned
2 jumbo carrots, julienned
2 green onions, sliced
1 tablespoon toasted sesame seeds
3 tablespoons shaved coconut
3 tablespoons roasted unsalted peanuts
2 tablespoons toasted almonds
--THAI COLESLAW DRESSING--
8 ounces Thai sweet chili sauce (Lingham’s brand is good)
8 ounces orange juice 1/2 ounce honey
1/2 teaspoon fresh ginger, chopped fine 1/2 teaspoon light brown sugar
1 teaspoon cilantro, chopped fine
1 tablespoon sesame oil
For salad: Combine cabbage, zucchini, carrots, onions, sesame seeds, coconut, peanuts and almonds in large bowl. Chill until ready to use.
For dressing: Place ingredients in a mixing bowl and whisk together. Slowly add sesame oil while whisking. Pour desired amount, about 1/4 cup, over chilled salad vegetables. Serve.
PS I add fresh grated ginger, don't usually have zucchini or coconut and still tastes great-its the sauce. Carrots are good julienned but shredded okay too.
Its forgiving and you can change it a bit if its too hot-less chili sauce.

PS I usually do this with purple cabbage
a small head and 5-10 medium carrots, 1/2 cup peanuts as the main thing and now I do it by eye

Here is the recipe from Kentucky Fried Chicken Restaurant. Made it lots of times for fund raising at my kids school.
KFC Cole Slaw
8 cups shredded cabbage
1/4 cup carrot, shredded
1/3 cup sugar
1/2 teas. salt
1/8 teas. pepper
1/4 cup milk
1/2 cup mayonaise
1/4 cup buttermilk
1 1/2 tbls. white vinegar
2 1/2 tbls. lemon juice
Combine cabbage and carrots in a large salad bowl. Mix remaining
ingredients together and combine thoroughly. Pour liquid ingredients
over cabbage and carrots and stir. Refrigerate at least two hours
before serving (overnight is better). Stir well before serving

When I lived at home, we just put a little sugar and mayo with salt and pepper. Hope this helps. DeVon
