Hi Cuties: I just finished a couple of batches of Microwave peanut brittle and thought some might like the recipe. Very good and easy and better than store bought as it is fresh

1 cup (I add more) peanuts or other nuts you like
1 cup sugar
1/2 cup corn syrup
1/8 tsp salt
1 tsp butter or margarine
1 tsp vanilla
1 tsp baking soda.
Combine peanuts, sugar, corn syrup and salt in 1 1/2 qt mixing bowl (glass) is best
Microwave on high for 4 mins, take out and stir well.
Microwave again for 4 mins, watch so it doesn't burn
Take out and stir well again
Add butter and vanilla, mixing well. Microwave again for 1-2 mins. Add baking soda and gently stir until light and foamy. Pour mixture onto lightly greased cookie sheet, spread quickly as evenly as you can. I put the sheet in my freezer for about 1/2, then take out, turn it over and the brittle comes off, break up and put into bags or air tight container.

Thank you for the recipe. I have never tried doing this in a microwave. I grew up in rural lower Alabama and my father grew peanuts. We made
peanut brittle the old fashioned way. There were 4 of us girls who would make candy on Sunday afternoons. This brought back such fond memories. We sure didn't get into any trouble back then. I own a few acres of the farm now. My brother rents from me and tells me he
had a bumper crop. I live about 200 miles away. I didn't get any of the peanuts. Oh well I have some pecans and am going to try your recipe.

Thanks,have been wanting to try the microwave method but didn't have the nerve to just pick one from a cookbook without a recommendation.
Do you have to use raw peanuts or are the bottled dry roast ones okay?

I just use either salted or unsalted peanuts. Where I live you can buy a large bag of them. I haven't tried dry roasted.
I have also bought a tin of mixed nuts, or cashews. I just cut them up a little so they aren't so big

I have been thinking about peanut brittle for the last 2 days, mentioned to DH this morning that I should find a recipe and make some. Thank you so much Jerri, I shall enjoy I am sure of it. If figure I can't dance, I might as well eat LOL.

Just be careful as I said it gets very hot and don't want to hear a helper has hurt themselves. It is a good recipe and takes no time at all. I put the bowl in very hot soapy water to soak off any remaining brittle, it just disappears.

This sounds so easy and good. I just received a 5 pound bucket of pecans. Now I know exactly what to do with them. My grandson will be here to stay with me for the holiday and that will be something good for us to do together he always like to help me. Thanks and Merry Christmas.

It is easy and pecans will be yummy. I have done it with mixed nuts as well, just chopped them up a little.
It will be a nice memory for you and your GS to have, just be careful as it gets very hot, so make sure you use a potholder to take it out of the microwave.
