Sorry I just saw this today. Shepards pie is so easy.
I buy a large pkg of lean ground beef. I have a really big cast iron frying pan, so I put a little oil in the bottom and fry up the ground beef. I cut up a couple of onions and add to the beef. I add a little pepper and some liquid bovril or oxo cubes. Once this is all cooked well, I just add some frozen corn. In a separate pot, I boil up some potatoes, mash them with a little butter and milk. I have small pyrex bowls, large enough for single servings,so I put the hamburger in the bowls, and add the mashed potatoes on top. Cover with saran and wax paper and freeze. If your doing this for a family, just put the hamburger in a loaf pan and add the potatoes on top. If you eating it right away, I just put it in the oven and bake on 350 or so. Cover the top with foil. You are just really heating it all up. I am just one, so I just put mine in my toaster oven and heat, then for about the last 10 mins or so, I take the foil off and put on broil until the potatoes look a little brown. (Of course you take off the saran first)
Sorry I should have also mentioned, if you get lots of liquid in the pan, I drain off as much as I can and make gravy, then add it to the meat. If you don't get much liquid, I have also added a can of beef gravy to the mixture.
