I don't leave the final satin stitch in on parts that are covered by another piece, only the attachment lines. The fabric does not show through, but the satin stitch usually give a bit of a r

Both are very cute. Looks like you did a great job. While I'm not a digitizer I have sewn a ton of appliques. The best ones always have good tack down stitches and usually a zigzag stitch on top of those which work as a base for the satin stitches. The satin stitches are nice and wide to cover all the fabric and trimmed edges.
