the embird site itself use to have tutorials that were very easy to follow have you tried there?
Here are some I have use , you may have to cut and past the links. File them away so you have easy access to them.

Check out BDZines. they have lessons that are very reasonable. Hope this helps. I'm new to embird also and bought these.
Embird has lots of tutorials on their website, arranged by subject, much more practical than the user's guide that is alphabetically arranged.
Clipartopolis has a number of nice ones too, which I found very informative when I started.
I bought two Flying needle lessons and they are good, but offer nothing that I had not already found on the Embird site. The free articles on digitising are well worth reading; they stress the importance of careful planning and testing your designs. The list of shortcuts is worth printing and keeping close to your pc, it slows you down at first but you'll soon know them by heart and then using them increases your speed considerably when you are past the beginner stage.

Guess there is a lot more info around - clipartopolis com offers some tutorials in the university section too.
