Thankyou for the recipe. It sounds delicious and I love the way you add fruit, too. I'm not too sure about the 'sweet potato squash'. We have sweet potato here and we have pumpkin and those miniature pumpkinny things that we call squash. I think you're probably using what we call pumpkin since you put it in the oven and then scraped out the cooked flesh. Sweet pototoes are easy to peel, if scrubbing doesn't clean the skins, and making soup with our tiny squash would be way too tedious a job.
We love soup any time.... get tired of it by the end of winter.... but this looks just right for now. Generally, I hate cooking but this looks too good to pass by.

Oops I forgot to add that peeling the squash raw is a difficult task...........I have nuked it for 3-5mins each & that makes it easier but the best results I have had were with this last batch because I baked the squash for about an hour after taking the seeds out & cutting them in half. Then when it is cooled you can scoop the middle out with a spoon. The easiest way so far.
Wow I didn't realize that anyone would want the recipe but here it is & I did change it LOL I always do.......................I added apples (have done the pears too) because that's what I had on hand & I add 2 shredded carrots with it too. It really is creamy & delicious. This year is my first time making it & I have made it in batches of 2 8 times this fall. It is also very healthy or so my Nutritionist says. It freezes very well too Thanks everyone I hope you enjoy it as much as I do
Thanks - I bought some butternut squash and intended to make some soup after checking it on line, but I'm going to give this one a go!
