This is the recipe for my Shortbread..very simple
3 1/5 cups all purpose flour
1 cup corn starch
1 cup icing sugar
1 lb of butter soft, and a pinch of salt.
Mix all together and knead well until it is smooth and well blended.
I then make a large ball and cut it into 4's.
Roll out on a little flour to about 1/4" thick. I use mini Christmas cookie cutters, they are less than 2". Put on cookie sheet. I use a corn skewer and poke each one so they remain flat. Bake in oven 325-350 for 10-15 mins, or until still light in colour.

I think I may try your shortbread recipe. It looks easy enough. I live in high altitude so I would probably have to add another 1/2 cup of flour.
I will have to give this a try...I have never made shortbread cookies with icing sugar and cornstarch...
Good for you Jerri starting early. I normally bake and we fill the car with goodies to take to Johannesburg for Christmas. This year we are flying so will just have to bake when I get there.
Yes, I am early, but its always been my way. Being a single parent and working full time (now retired) I had to start everything early. I like to enjoy the holiday season and not have to panic to get things done at the last minute.

I am not a cook/baker by any stretch of the imagination, but these are two things I can make that everyone loves.

Good for you Jerri, I love the smell of Shortbread, but these days have to eat Gluten free ones. Some are better than others. Love Chris

I'm getting quite interested in Christmas cooking - dangerous stuff since I actually hate cooking but my daughter, Sandy, made pumpkin pie with marshmallow topping in 2000 for Christmas and I've been 'sold' on American holiday food ever since.

It is a recipe that my Step-Mom had. I have been making them for almost 50 years and its just something my kids look forward to every year. I can't get some of the original spices, but they seem to still like them, with what I have substituted.
Some people know it as Bits and Bites.
There are Rice Chex, Wheat Chex, Corn Chex, Cheerios, Shreddies, Peanuts, Pretzels, and now I add corn nuts and gold fish.

I don't make Fruit cake and butter tarts much anymore, my family are trying to cut back on all the Christmas goodies. I will be away for a week or so, so wanted to get it done as I won't have time when I get back.
