I'm a quilter and the sashing is the thin strips of green you have around the yellow blocks. Do you mean the binding? Binding is the final small 2in-to 2 1/2in fabric on the edge. I always encourage people to put a binding in a color that will stop the eye from traveling. Dark colors stop the eye. I would do the binding a darker shade of the green you have. I would also, encourage your quilter to stitch little birds though out the borders and blocks.
A tremendous amount of work and so colorful. If your a beginner, I can just imagine you in about 5-10 years. Very beautiful work

You have done some really lovely designs. You will need to just lay down some fabric and audition if for your other colors, but if you mean at the top, I'd stay with the same green you have used on the sides.
