Looks yummy...so when you seal with cello....do you need a wax layer too? I have never seen jams sealed with cello before...

This is how it's been done in my family for years. I remember my Nanna doing it back in Adelaide back in the 1950's! Love Chris

Waxed paper discs, I will take a photo tomorrow to show you all. Stays good for a year, xx

dragonflyer by dragonflyer 24 Aug 2014

Oh thanks...I have not seen waxed paper discs before...I have only seen paraffin was melted and poured over the top of the jam to seal it...

All the new recipes you have to process jams in a water bath. How do you put these in a water bath to can them? Do you not have to put wax on them? Do they have to be eaten within a month or so? Sorry for all the questions but just wondering. Have a great day

Hi, I put fruit & sugar in a large saucepan, rapid boil for approx 6 minutes pour in sterilised jars place a wax disc on jam then cello to airtight, jam can last for at least a year, but not in our house, lol, xx

brendalea by brendalea 25 Aug 2014

That is the way I use to do it. Now the Certo labels tells you to put it in a water bath. Jam here also doesn't last long. I also give it as gift to family & Friends. Thank you for the information. Have a good day. Happy Canning

Looks yummy. I've never tried marrow chutney but have pickled zucchine/courgettes that had grown to real marrow size, just like you would pickle cucumber.

Hello Jean, did you use Zucchinis for this Chutney or something else. I've looked up Marrow and there are many different types.

I LOVE BLACKBERRY JAM - it would have to be my all time favourite. When my sister and I were young we used to go into the Adelaide Hills to pick Blackberries with Mum and Dad on the weekend. Love Chris

Hi Chris, Zucchini is that courgette? Marrow is like a lager version of the courgettes, xx

pennifold by pennifold 24 Aug 2014

Yes, Zucchinis are known as Courgettes. Love Chris

looks better than my effort......I made Zucchini chutney earlier this year and threw the lot away, it tasted ghastly. I wonder if you will share your Marrow chutney recipe with me? cheers Vicki from South Australia.

Do you suppose she has sealed it with hot wax and is storing it this way. :-)

vickiannette by vickiannette 23 Aug 2014

Carolyn, the cellephane jam covers seal the jars. You just dampen them with a little vinegar, then put them on the jars while a little bit warm. They do a bit of 'pinging' while the air sucks out, then they tightly seal the air out.

mops by mops 24 Aug 2014

It's often done this way in Europe, that's why you see so many cloth jam jar covers to protect the cellophane from being punctured. I use it for jars with older lids that have had their best time, or under plastic ones - then add that lid for protectio

pldc by pldc 24 Aug 2014

wow that is just amazing! I have also never seen them done with celowrap? Is it a special kind?

jeanfoz by jeanfoz 24 Aug 2014

Thank you Vickiannette, a good way to explain, yes pinging I love that word, xx
