Last batches for today! I freeze beets on a cookie tray after prepping them so they will not be a big frozen clump! & from the beets I get enough juice (water that I cooked them in) to make 2 batches of Beet Jam & 1 of Strawberry Beet & before you say ewe..........Beet Jam is really very good & quite sweet too! I have to say that I am loving the new breakfast counter it is super handy!

I made beet jam years ago and it was very good. Kinda tasted like raspberry jam if I remember correctly.

Never had beet jam. That sounds interesting. Strawberries and beets does sound like a strange combination. You have been so busy with canning.

Yes I have been trying to think what a nice cracker might enhance the flavours of the jams to put in the baskets too

Nice work again! Beet jam sounds interesting, never tried that, but I did carrot jam and that tasted nice and sweet. Tomorrow I'll have a go at marrow jam ( or rather oversized courgette - got one from a friend that weighs almost 4 lbs, the courgette that is, not the friend). And I'll have to search for jamjars.

yea that's a good one

pldc by pldc 31 Aug 2014

yup I was thinking that too except that it has certo in it. I was sure that I added it but then it was thin so I added another box & it is still thin, which is why maybe I forgot to add the sugar?

Beet jam is a new one for me. In fact we never even canned the beets. Pickled a few jars but that was it. Thanks for the info.

Before you throw out the batch in the middle, taste it first. If it taste ok, eat it now or put in freezing containers & freeze it or reprocess it with maybe more sugar. It seems such a shame to throw out your hard work.

the batch in the middle the darker one has not set So I will have to throw it out? I don't know what else to do with it? Maybe I forgot to add the sugar it is so much darker then the rest?

hi , maybe you did not put in enough certo (pectin), or sugar , or you did not cook it down longer.with mine when that happens i put it in the fridge and use it on pancakes, bake a cake and use it. on french toast. today i made the pineapple and peach jam.boy those ontario peaches are so oo good and the jam is just supper.

pldc by pldc 31 Aug 2014

sounds like a yummy batch for you too & yes the Ontario peaches are terrific! I have to wonder if I forgot the sugar? I like your ideas they sound pretty good too.
