Whooppie! I am conquering the chestnuts. I changed to a bigger knife and thought it would be much easier to score them by placing the nut on its flat side. Duh! It is still very time consuming, but much quicker and easier to score them. I am loving the recipes of what to do with them. I am going to try roasting some of them too. I have been simmering them to this point. Thanks for the support, the suggestions and the comments.

I lay the chestnut on a fabric potholder and use a small knife with a very strong pointed tip, I puncture a hole in the chestnut and pull down at an angle to make a 1/2" slit. It's important to cut parallel with the lines on the chestnut.
I lay them on a pan and bake them about 20 min. at 350 degrees.
I've also cooked them in the microwave but can't remember for how long. Not long I'm sure.

I use the microwave. BUT the first time I over cooked and burned the heck out of them. All that work cutting the X and for nothing. Never thought of simmering them.

I have not worked much with nuts. When I finally have time, I may look into it. Thanks for sharing and I can't wait to hear what you create with them.
