I love baking too but have not done almond croissants. These look wonderful!! :-) I have just mixed up a bowl of overnight bran muffin batter and I am making a key lime pie for dinner. I figured since I can't stitch at the moment, and my home is still full of boxes and "stuff" from our basement disaster, I may as well spend time in the kitchen. Sure wish you lived close... we could share...

Cheese croissants are most common that too various kinds of cheese....cheddar, white, feta, cottage to name afew!
Sweet variations are chocolate, almond, dates, mixed nuts, jams....etc etc :)
Do give them a go at home....you can make them as your heart desires!

If you make up a paste of these ingredients it makes a delicious filling. 150g butter, softened - 1/2 cup (75g) icing sugar, sifted, plus extra to dust 4 tablespoons (1/3 cup) flour 2 cups almond meal and 1 teaspoon almond essence. Place these all in a mixer and combine and then fill the croissants. It's delicious. Well done Fatima, these look fabulous. I had one a couple of weeks ago and it was delicious. Love Chris,

What I did in mine is filled them with some home made marzipan! Simply by grinding blanched peeled almonds, icing sugar, little vanilla and some egg white just enough to bind the mixture!
