I'm wondering if Pellon Insulbrite (not sure if this is how they spell it) you use when makinhg casserole carriers, table runners, would work? Pellon has a good web site for projects using thier products, it might be worth askeing about.
I made credit card holders with mylar. I was unable to test them, however now that I read the story you link to, I will test them this week, I think they work fine. It did indicate that multiple cards in the same slot distort the signal so that may be the case also. Thank you for bringing this up again. It is so important for travelers.
I think that while the cards are together, it does offer some protection. I wonder how you keep your cards safe when you take one out to use.
I made a card holder ITH for to fit my hubby's wallet--lined w/layer of alum foil between fabrics. I heard that the kitchen foil would "foil" the copiers.
I liked the idea of putting duck tape on the foil to help keep it from tearing.
I am not sure the cost of this but it seems more cost effective to get the sleeves they offer. It is my understanding that the best protection happens when the card or passport is closely (like a tight sleeve versus loose inside a bag) covered by the RFID blocking material.
They do have jeans with protected pockets and blazer/jackets as well.
Here is a simple way to make a RFID Blocking wallet. You could then cover this with fabric.

I don't know the name of the fabric - but I just bought a purse from Ebags and it has that protection. It was called: RFID Blocking. Good luck!! Hugs,Laura*
