Recipe for Noah & anyone else who would like to try it, 330g dried fruit, I. Put 100g cranberries & 230g mixed dried fruit, but whatever you got, I might try some dried apricots next time, 75g unsalted butter, 75g plain flour, 1/2 tbsp black treacle, 1 sm apple peeled & grated, 100g dark brown sugar, 1 tsp mixed spice, 80ml dark rum, I used jd, jack Daniels ..
Soak fruit for 24 hours, oven 180c or 160c fan, grease 8 cups of a deep muffin tin, leave 4 corner cups, beat butter, sugar, add eggs gradually, treacle, flour & spices, then add soaked fruit & apple, spoon mixture into the 8 greased cups, fill 4 corners cups with boiling water, place on bottom shelf approx 40 mins. 😄
