another day of canning Salsa on the right & creamy garden vegetable on the left. I have to say making the salsa takes a very long time & I started with about 14 pounds of tomatoes & by the time you seed them & dice them up you only get about 7 cups! So rather then throw the rest away I decided to make more soup with it lol. I don't think that I will make salsa again too much work for so little yield. I started @ 9:30 this morning & just got done now @ 3!!!! But we do love our soups so that is a bonus

Yummm!! The jars make a pretty picture too. I admit I dehydrate a lot now. My back can't manage the weight of canning now.

I just love salsa but there's only 2 of us so store bought is just too much for us, we would be eating it all month. Anyone know if left over salsa can be frozen?? I hope so. LOL
