Why is it that when I am about to use up a spool of thread that it seems to go on endlessly, but when I am about to use up a bobbin it ends about two inches before the end of the project??

Yup, I know. I think it's because we can't see the bobbin all the time.

It goes together with the machine making a strange noise the moment one leaves the room for a second

This is a common thing around some of my machines. However, since I got my new machine, it stops and tells me when it has about 2 feet left, and I can change the bobbin very easily. So, this doesn't bother me as much as it did on my older machines. The same thing happens with the top spool except I can see it is going to run out and I pray a lot that there is enough thread left!
