Here is the recipe for the muffins.

Oatmeal Cakes
2 C. ground oatmeal
1 C Soy flour
1 1/2 C. Splenda
1/4 cup ground Flax seed
1 tsp Vanilla
2 tsp baking powder
1 tsp baking soda
1/2 cup apple sauce
2-3 ripe bananas
1/2 cup egg beaters (2 eggs)

Walnuts to your liking

Bake 350 until tooth pick comes out clean

you can substitite apples,pears, grated carrots or reconstituted dried fruit instead of bananas

Elaine, does Splenda (artificial sweetner, sugar substitute) go for sugar one to one? Could I use 1 1/2 cups of sugar instead of the Splenda? Or sugar to taste? I have gluten allergy, and this recipe would be great using certified gluten-free oats, I love oats!!! Thanks so much for it. Marji
