You are amazing Carolyn - you do alot of canning and that is wonderful that you do - Rick would love a jar of these, too. I am sure your friends can't wait for you to get all your canning done - so they can reap from the profits, too. Great work. I would be beat, too.

I just did apple sauce and then dehydrated some pumpkin leather. I can appreciate all your hard work. Question: what is "3 cups vine" in your recipe??? Do you make a liquid or cook the beets in the liquid and then can? Sounds good with the brown sugar. Thanks for posting.

It means 3 cups of Vinegar!!!I put all the ing. in a pot a boil it,them pour over the beets in my jar.I cook the beets in a large kettle 1/2 bushel at a time (in the pot) then when there cooked i put them into kitchen sink & skin them .Then cut into small pices into my quart jars .Then pour the liquid over them & put on the lid .I leave for a month before i eat them Carolyn
