I wanted to share with you a beautiful recipe that I made for dinner last night. I wanted something quick to make, as I had been down at Meganne's place all day!

It's a SALMON TOMATO TART

Here is the recipe from the "Alive and Cooking" show here in Australia.

6 eggs
1/2 cut grated Mozzarella cheese
4 spring onions
1 punnet Cherry tomatoes halved
1 can Pink Salmon about 390g (drained)
1 sheet puff or short crust pastry
Freshly ground pepper and salt

Pre-heat oven to 220C, line a 25cm baking tray/pyrex dish etc. with pastry and the washed tomatoes and blind bake for 5 minutes.

Finely slice the spring onions and combine in mixing bowl with the eggs, pepper and half of the cheese mix.

Combine the egg mix with the can of Salmon and pour into pastry case, top with remaining cheese and bake at 220C for 20-25 minutes or until nicely brown.

I always put nutmeg on the top of any quiche I make and I actually used a bit more cheese. It was delicious.

Also because of the size of my dish I used 2 pieces of pastry (bought from supermarket) and criss crossed them. Yummy!

No, you did something quite wrong!!!!

The idea is you're supposed to bake it BEFORE you come to visit and bring it with you. hahahahahahahaha!!!

WOW but it looks great Chris, Now I'll have to make one! :-)

Hey I made the almond caramel toffee, but it turned out more like fudge.
I think I didn't cook it long enough. It's extremely sweet but edible if you like that sort of thing. I'll make sure MIL doesn't eat it all before your next visit. :-))))

I checked this out with my translator and yes I understand your predicament!!!! I laughed my head off, I don't think asking for this word is what you would want. Ha ha ha he he he!!!! As Jussyc has said it is a pastry that has a lot of air introduced into it and therefore expands quite a lot and is very flaky. It's beautiful. Love Chris

I guess every one likes salmon, but me. I do not like fish and if I do eat it I have to put on tons of tarter sauce, which defeats the purpose of low fat cooking. As a child we Catholics could not eat meat on Fridays. Our non meat meals consisted of eggs, or pancakes and waffles. Fish sticks or bullheads. YUCK.
It looks fantastic though, and it sounds like a good time was had. Cindy B

Hi Cindy, I'm not a great fish lover and actually prefer Tuna. I only eat it because I know it's good for you. My very first preference would be deep sea Perch, it's just like eating chicken only really white. Love and blessings Chris

Well, I've done the right thing - copied and saved this recipe. Don't hold your breath until I cook it. I hate cooking!!!!!!!!!!!
This does sound rather delicious, though, and think of all that omega 3 stuff.
