My husband has celiac disease. We have been cooking and baking gluten free for a few years now. Here is a link to a gingerbread recipe. The recipe calls for a gluten free flour mix. You can buy this in the health food section of your supermarket. It is a premixed flour so you don't have to buy all the individual flours to make your own. Beware it is about $5 for a 1 pound bag, but that is the case with a lot of gluten free foods. I hope this will help you.
