THANKS LYNN (DESIGNGIRL)for the wonderful Dark Christmas cake recipe! I made it this afternoon whilst doing the Reindeer cookies! I've taken a picture - it's the biggest cake I've ever made! I had to buy a special tin to put it in! You can see how much space it takes up in the oven!! This pan is 1ft x 1ft x 4inches high.

It will finish cooking tonight at 11.30pm. It has to cook for 5 hours!!!!! I won't be able to eat this one as it has normal flour, so I'll still make a Gluten free one.

Looks great Chris. I would have put a 'collar' of brown paper around the outside of the tin - in case of burning. Well done. Sarah.

I've actually got Alfoil on top of cake - hopefully that will keep it from burning - even though it's only 150C love Chris

I always use two layers of buttered brown paper and two of baking paper (the non waxed type) top bottom and sides. It helps to distribute the heat evenly without burning.

Lyn, these are extra Almond flakes - I put all the nuts in the mixture - I had every bowl in the kitchen cupboard on my bench. I had all the ingredients lined up and I had to get Amy to help me stir it! What a huge cake! Pity I can't eat any of it. Love Chris

Be sure to wrap it in a brandy soaked cheese cloth then tin foil. Store in the fridge in a plastic bag, it last for along time. I will be serving ours over the holidays. Hugs Lynn

Thanks Lynn - I'll do that today. I have Mainly Music all morning and then home. I'll buy some cheescloth at Spotlight. It's 7 hours later and the cake pan is still warm! Love Chris

By the way Lynn, I wish I had put the alfoil on earlier. The nuts are brown but not burnt. And as it is a DARK Christmas cake it looks really dark. Love Chris

You can actually have some when I next see you! It will feed an army I reckon. Lyn says it can stay in the fridge for a year! Mum said ha, not likely, it will be eaten!! She loves fruit cake! Love Chris

When it's cooked, put a clean tea towel over the top then wrap it in a towel to keep the steam in. It will be more moist Cool it in the tin overnight. I always wrap the outside with 3 or 4 layers of damp newspaper as well as the alfoil on top for about an hour of cooking.

That is a giant cake. Must be plenty heavy. It's a shame you can't take a pill for your allergy and then be able to have a slice.

Your oven looks clean, Chris. What's your secret? I treated myself to a Neff oven but it's more NAFF and I'm not looking forward to cleaning it before Christmas. I'm afraid that that is just one of the tasks I leave so I can go and sew! Jan

I only got my new kitchen last year and so I clean the glass after every use. The inside isn't too bad. Love Chris

I reckon so Vicki! Why don't you give it a try? It just takes a bit of help stirring all the ingredients and a bucket would have been great to do that in!!!!!! Love Chris
