Do you ever get asked to embroider something that you really don't want to do, but say yes anyway? I seem to be able to say no when I am swamped, but not if I just would rather not do it. Why does "yes" just fly out of my face?

Because you are a people pleaser and don't want to disappoint anyone. Practice saying no before you need to. Let them know you are swamped with previous commitments. The best way to get them to reconsider. Charge them for your time and efforts.

I also do this.... can never say "NO"
But for some reason when I do not want to do something, I always seem to have trouble with it.... I should just say "NO" and be done with it, right???

That's what I think too! Why is it so hard? I worry more about their feelings than mine!

Because you are a girl...men don't have that problem.
Just remember, "No" is a complete sentence.
