what does it mean when a site says that their designs are maunally punched

That is a very good question, but I do not understand auto digitizin program, I thought all programs are autodidgitize,?????????????????

Oh no, they aren't!
Autodigitizing means clicking a picture as a whole or its separate parts and let the programme convert it into a design. You can almost always see the difference with one that's done manually: the stitch angles are all the same, the choice of satin stitch / column stitch or fill stitch is made according to the rule: narrow is column stitch wide is fill stitch and there often are unnecessary thread changes.
Manual digitizing involves defining the areas yourself; thinking about the pathing: what to stitch first, what comes later; setting points or nodes to define the different shapes; choosing the sort of stitch; setting the angles, the density, and so on; choosing globaal underlay or underlay for each part; making connection stitches to avoid jumps, etc etc.

Manually punching is where you decide where each and every stitch will be placed in a design, involves loads of clicking etc and it takes much longer than auto punching, where with just a few clicks the program will turn an image into a design your machine will sew. So yes, manually punched designs are usually nicer to stitch out because lots of thinking has gone into which parts will stitch, how & when. hth :) xXx

I don't know if they are all dense but the ones with weird jumps are usually auto-digitized

Manual punching allows the beauty of the design to shine. The subtle shades can be done via a change in the direction of the stitching. With Auto-digitizing the computer cannot "see" the same way a human can. The human sees art. The computer sees pixels -- tiny dots of color on the screen. It disregards any it finds unimportant.
