I wish we had smellavision - my Christmas cake is cooking away - put it on at 9.30am this morning after getting Aqualina to help with spreading it out. It will be ready at 2.30pm about the time I go to collect Aqualina from pre-school. Only 4 more weeks to go taking her and collecting her from pre-school. Anyway here's a picture of her patting it down and the next picture is after 3 hours into the cooking cycle. She said to me "Nanna, I love cooking with you" and when we went to leave, she commented "Ooh! you smell like the Christmas cake" . She was so good, she knows she can't eat any of it as there are 8 eggs in it and she is highly Anaphylactic to eggs and it's full of nuts too - again Anaphylactic. I even asked if she could put the almonds on top and she told me "No Nanna, I can't even touch the Almonds". She is so knowledgeable about her condition. I'm so proud of her! She's a little doll. This recipe is from our own designgirl (Lynn) and it is an amazingly delicious Christmas Cake. It says it will last for a year! I bet we eat it all before that, especially as we have a housefull for Christmas Day this year. Trev's Mum, brother and sister-in-law and their elder daughter Emma are coming, along with our families! AAAGGGHHHH!!!!! BUT IT WILL BE FUN!

Cake smells throughout the house are lovely especially Christmas cake.Just as well my husband isn't there because would be a big hole in the corner before it even cooled.
Few years ago watching the bushfires miles away on tv with the smoke smell & ash floating into the house ,I don't think smell a vision is something I want.

It is so important that children with allergies know exactly what they can or cannot eat or touch. Aqualina looks like she's having fun even though she can't taste it.. What Nanna do when her helper is in big school..

Yes and Aqualina is aware of what she can and cannot have. Aha! I've still got Ophelie who will be 5 in April and Amy isn't sending her to school next year. Then of course I'll have Delphi till she is 5! I love cooking with the kids, it's messy, but fun. Love Chris

Thanks Sharon, it's got quite a few in there. Walnuts, Almonds and Pecans and of course lots of fruit too. I think it only needs 4 and a half hours though as I think it's a bit dry for my liking. Love Chris

Thank you, Chris for mentioning our Christmas cake recipe. We are making ours this week also. Aqualina is so cute, and so knowledgable for her age. My granddaugther,Holly has a girl in her class who has the same allergies. The children in the class, which is grade 5 ,( 9 and 10 year olds) are not allow to take anything this girl is allergic to because she might eat it. She needs a lesson from Aqualina in what she can have and not have. At 9 or 10 she should know. Thanks for posting this really cute picture of Aqualina, she is Nana's little helper. Hugs Lynn

Hi Lynn, thanks for this beautiful cake recipe. I've said down below I think I will cook it next time for less than the 5 hours - it's a bit drier than I like a Christmas cake to be. I might put some more Brandy over it between now and Christmas anyway, that is unless we eat more of it and in that case I will just have to make another one! Aqualina has had it drummed into her since she could talk so she is very aware of what not to eat. Once again thanks for this gorgeous cake. Love Chris

Well Chris I went outside yesterday and had a few deeeeeeeeep breaths and could almost smell it from here. LOL. All I could smell was cane fires as it is harvest time here. I had a look at the recipe and the amount of sugar is too much for me, being a diabetic. Richard and I (both diabetics) are the only ones in our family who like fruit cake. Hugs Marg

Hi Edith, I'm very lucky as they are all here in Newcastle along with us. This little one will go to school in February - our school year starts on the last week of January and seeing as Aqualina will be 5 in February she is going off to "big" school. So I'm taking every opportunity whilst I can to get her to help out. We've only got 3 weeks left for pre-school as they finish the week before Christmas. Love Chris (P.S.
