Hi there all! Today after a long time I baked some croissants! I wanted to try out some almond croissants but had no idea about the filling!

When I had eaten some from out it felt like some almond paste kind of thing so gave my own version a try and they turned out pretty good :)
Would love to know if any of you make almond croissants and if you do .....what do you use for the filling?
Well baking is also one of my interests so thought to share with you all :)

If you make up a paste of these ingredients it makes a delicious filling. 150g butter, softened - 1/2 cup (75g) icing sugar, sifted, plus extra to dust 4 tablespoons (1/3 cup) flour 2 cups almond meal and 1 teaspoon almond essence. Place these all in a mixer and combine and then fill the croissants. It's delicious. Well done Fatima, these look fabulous. I had one a couple of weeks ago and it was delicious. Love Chris,

Thanks a lot Chris :). ...I will give this a try next time!
What I did in mine is filled them with some home made marzipan! Simply by grinding blanched peeled almonds, icing sugar, little vanilla and some egg white just enough to bind the mixture!

I make them from scratch. ...no ready pastry!
They are not difficult to make just a little lengthy process because of waiting time :)
If you have the patience. ..go ahead give it a try and it is worth the wait!

They look delicious! This is one of those times when I wish I could just reach through the internet and have a taste of them. Looks like a lot of work, but I'm sure well worth tube efforts.

Dont worry seeing the lengthy recipe....its a great well explained one! Has a video tutorial as well for those who wish to watch and learn and turns out great!

Oh dear you are missing out on something so delicious and the choice is vast :)
Cheese croissants are most common that too various kinds of cheese....cheddar, white, feta, cottage to name afew!
Sweet variations are chocolate, almond, dates, mixed nuts, jams....etc etc :)
Do give them a go at home....you can make them as your heart desires!

I love baking too but have not done almond croissants. These look wonderful!! :-) I have just mixed up a bowl of overnight bran muffin batter and I am making a key lime pie for dinner. I figured since I can't stitch at the moment, and my home is still full of boxes and "stuff" from our basement disaster, I may as well spend time in the kitchen. Sure wish you lived close... we could share...
