OPHÉLIE is turning 5 tomorrow! Can you gals believe that? It seems like only yesterday she was born.

On Sunday we had a big birthday party for her at a local Treetops climbing/flying fox ride park not far away from Newcastle at Minmi. To say it was great fun watching all the little ones get tied up is an understatement. Some of the children had to be helped and Ophelie was one of them. She got a bit scared on a couple of the sections. I don't blame her they were up above our heads about 3 metres! They were all harnessed and couldn't fall off, but it would still be scary!

Amy rang me Saturday afternoon (we had Jasana and Aqualina staying with us for the night) asking if I could make a Zucchini Slice and my famous Cornflake macaroons - of course I said yes. Amy made a gorgeous Unicorn cake. I didn't get a picture of the cake on my camera unfortunately, but took one on my phone and haven't downloaded it yet. It was great! We had lots of barbecued chipolata sausages (little ones that were to die for) which came from Tamworth (a long way from us), salads, bread rolls, potato salad and of course my zucchini slice. I had to make it without bacon as one of Amy's best friends is a Vegetarian. We didn't get home till about 2.00pm from 9.30am!

Tomorrow Wednesday I normally have the girls, but I'm taking Mum to Sydney to see the Stage Production of Les Miserables. Mum is so excited, I've seen it a few times. We are actually going by King's coaches, which will collect us not far from here.

I'll ring Ophelie in the morning around 7.30am and sing Happy birthday to her. We do that to all the family! Amy has started Ophelie at Karate lessons yesterday! Tomorrow Steve and Amy are taking her horse riding whilst Delphi will be in day care. She got some lovely gifts and we gave her money to pay for the party and a beautiful Aqua 10 drawer storage unit for all of Ophelie's art utensils etc.

I love that you all have a large family party to celebrate birthdays. We do that also and it's some of my (older) grands best memories.

Brave kids to do that. I couldn't thanks to my fear of heights. it sounds like it was a spectacular day for all. Happy birthday Ophelie. Have a wonderful time with your Mom.

Happy Birthday Ophelie, you are adorable! Chris , Amy has done a wonderful job on the cupcakes, and I look forward to seeing the birthday cake. Heights scare me to, I get dizzy, so I don't blame her for being a little scared. Glad everyone enjoyed the day but I bet by 2:00 you were glad to be home. Wow the cupcakes are adorable Chris and I would love to see the unicorn cake too please....I hope you will share with us! It seems you all had a fun filled celebration. ....lucky 5 year old Ophelie :)

Hi Kim, it's a simple recipe. I just didn't put bacon in this time.

ZUCCHINI SLICE
350gms of Zucchini (about 3 normal sized ones)
1 large onion
3 rashers of Bacon (I use ones with little or no fat)
1 cup Self Raising Flour
1 cup grated cheese
5 eggs
1/4 cup oil, pepper and salt, grated nutmeg

Grate your unpeeled zucchini, finely chop your onion and bacon. Combine your zucchini, onion, bacon, cheese, sifted flour, oil and lightly beaten eggs. Season with salt and pepper. Pour into a well-greased dish (I use one about about 2 inches deep) I then sprinkle nutmeg all over the top to give it the brown effect and bake at 180C (350F) for about 30 - 40 minutes. ( You can also add some other vegetables, on Sunday I added half a can of sweetcorn pieces, and a small carrot - it gives it more colour!)

How big she has gotten...Happy Birthday Ophelie...and, Chris..what is Zucchini Slice....and I love Macaroons, but never have heard of any using corn flakes...can you enlighten me?

Here is the recipe for the Cornflake macaroons.

7 cups of Kellogg's Cornflakes
1 and a half cups of caster or castor (whichever way it is spelled) sugar
4 egg whites.

Beat egg whites till fluffy and gradually add the sugar till it looks like pavlova consistency. Then stir it into the cornflakes. Put blobs onto a baking tray and cook for 1 hour at 150C (302F) That's it!

Then decorate with whipped cream and a fruit of your desiring!

Wow, they grow up very quick. They are much more adventurous than we were when we were kids. I guess there are more fun parks these days. I have the zucchini recipe as for the macaroons, wellllllll too much sugar for me. Well maybe not, as we are sugarcane farmers. Grow it but as a diabetic cannot eat too much. Hugs Marg

She is a CUTIE !!!!!!!!!!!!!!!!!!!! LOVE the bunny cupcakes and the unicorn cake AND the cornflake macaroons too. One of our favourite recipes is the zucchini slice and at the moment we have zucchini growing like crazy, so not shortage of it! :D My recipe is almost exactly the same but I put in 375 g of zucchini.My family loves it. I have not heard of the cornflake macaroons and have taken down the recipe. Thanks for that. They seem easy !!! Flowers for all !

It does call for 375gm of Zucchini, but because I didn't have bacon on the one I made for the party I put in sweetcorn and carrot to make up the difference. Thanks for your lovely comments. Love Chris

Ooooooooooooooo that sounds like a great compromise . I have sometimes not put bacon in it (my MIL is a vegetarian) but I never substituted any else. This sounds like a great compromise. THANKS !!!

Aaugh, What happened to that beautiful baby and that darling toddler? She looks tall and all grown up! Get ready for the bruises pictures with the karate. My first hub was a short man and karate really bolstered his ego, because he knew he could "take down" the big tall guys. I only ever saw him do it in a class setting!
